Sesame Noodles
INGREDIENTS
1 1/2 cups cold cooked spaghetti or other noodles
4 tablespoons sesame oil, divided
1 cucumber
1 carrot
3 tablespoons red wine vinegar
2 tablespoons soy sauce
2 teaspoons granulated sugar
2 tablespoons toasted sesame seeds
1 ) Use leftover noodles, or cook some noodles. Make sure they're room temperature or cold. If they're sticky, toss them with 1 tablespoon of sesame oil.
2 ) Peel the cucumber and the carrot, then shave off thin strips with the peeler. (If you want to make smaller strips, use a safe knife -- like a silverware knife, or a butter knife -- to cut them more.)
3 ) To prepare the sauce, take a bowl and mix together the remaining sesame oil, vinegar, soy sauce, and sugar.
4 ) Pour the sauce over the noodles and sprinkle with toasted sesame seeds. Spread the cucumber and carrot strips on top.
5 ) Clean up the kitchen and dig in! To really enjoy the noodles, eat them with chopsticks! Or you can use a fork (Timothy thinks it's easier!)
